If I had to describe Avial in a sentence, think of it as it is creamy from coconut, filled with rich taste of various spices combined in a healthy mixture of vegetables. Guess what this meal will be a light relief to your stomach, as there is barely too much oil or any heavy ingredients. And yes, boiled vegetables are delicious too, just try it once!
Typically, part of the traditional Kerala meal Sadya, Avial in my opinion plays a role to compliment the main meat dish, however its taste shouldn’t be underestimated due to that fact. I like to serve my Avial alongside some curd curry and brown rice, and yes, it’s not totally authentic but it works if you can’t acquire some ingredients.
Typically, the recipe asks for curd, however in order to make it vegan I’ve used unripe mango instead to get a hint of tanginess. You can also use tamarind instead of curd. In some households of Kerala also add bitter gourd to the dish.
